Gluten Free Cinnamon Rolls

A Keto Friendly gluten free treat!

These little dessert snacks as wonderful when trying to maintain on the keto diet and needing to fill that sweet tooth.

Prep time 15 mins

Bake time 10-15

Ingredients:

Base

1 1/2 cups Mozzarella cheese

2 Tbsp Cream Cheese

1 Egg

3/4 Cup Almond Flour

1 Tbsp Erythritol

Cinnamon filling-

1 Tsp of Erythritol

1 Tsp Cinnamon

1 Tbsp of water

*Note: Can double or trill cinnamon filling to liking

Icing-

1 Tbsp Cream Cheese

1 Tbsp Heavy Cream

1 Tbsp Erythritol

*Note: Can double or triple icing to liking

Instructions:

Preheat oven to 350 degrees Fahrenheit

Heat Mozzarella and Cream cheese in separate bowl for 30 seconds or until both are melted then mix together.

In a medium bowl mix all dry ingredient

Put mozzarella and cream cheese mixture into large bowl and add dry ingredients slowly. **(Order matters or else one gets mushy rolls that stick to everything)

Spread base dough on top of parchment paper and spread evenly with a rolling pan.

Create the cinnamon filling by mixing the ingredients in a separate bowl.

Spread the filling evenly on the flatten dough

Roll dough with filling to a spiral

Cut 1-1/12 inch cinnamon rolls

Put rolls on parchment paper and cookie sheet

Bake 10-15 minutes or until a light brown

While cinnamon rolls are baking, combine and mix ingredients for icing

I found I like a lot of icing so make as much as you would like!

Spread on icing to cinnamon roll as to liking
